Fresh from the Gambia is good farmyard; crisp and healthy.
6 medium tomatoes cut into quarters
3 medium sweet peppers, julienne style
1 bunch lettuce
3 medium onions sliced into rings
½ kg boiled potato, diced
1 large cucumber peeled and sliced
1 tablespoon vinegar
1 tablespoon prepared mustard
Sugar, salt and pepper to taste
In a large bowl combine the vegetables except the cucumber in a separate bowl combine the
vinegar, sugar and mustard; mix well pour the marinade over the mixture; add cucumber, cover
and chill serve piled high on a bed of lettuce leaves.
