NADIRA TOMATO SOUP
A soup prepared in The Gambia during the abundance of the tomato harvest.
The perfect soup for an easy weekend light lunch.
400g fresh tomato roughly cut
1 large onion, chopped
2 cloves garlic, chopped
2 tablespoons tomato paste
1 cube of stock
2 tablespoons oil
Salt and pepper to taste
Basil leaves for garnish
Heat the oil in a pan, sauté the onion about 5 minutes.
Add the garlic, chopped tomato, cook for another 5 to 8 minutes.
Add in tomato paste and cook further.
Add the stock and bring to boil for approximately 5 minutes.
Reduce the heat and simmer for another 5 minutes.
Remove from the heat and puree completely.
Strain and return to the heat to simmer.
Season to taste.
Serve, garnish with basil leaves.
