PEANUT VEGETABLE DOMADA

Peanut vegetable Damoda can also be served with grilled chicken, fish or beef.

INGREDIENTS

200g natural peanut butter
2 tablespoons tomato paste
1 large onion, chopped.
2 cloves garlic, chopper
2 medium chillies, whole
1 stock cube
½ litre boiling water
Salt and pepper to taste

Grilled vegetable

350g sliced carrot
350g sliced aubergine
350g sliced courgette
350g sliced onion
350g diced tomato

COOKING INSTRUCTIONS

Mix local, natural peanut butter with cold water to a fine consistency, to remove any unwanted particles.
Bring to boil.
Add in tomato paste, chopped onion, chilli and garlic and leave to boil to form a thick consistency,
approximately 15 to 20 minutes.
Grill the vegetables.
Arrange the vegetable on the plate and serve the sauce separately.
